A-Train's Famous Oatmeal Cookies

Start with a basic oatmeal cookie base and feel free to add in up to 2 cups of your favorite mix-ins. Our picks for this recipe are chocolate chips, plain M&Ms, and marshmallows. Some other yummy options are raisins, dried cherries, Reese's pieces, pieces of Snickers bar, crumbled graham crackers, chopped walnuts, or roasted peanuts.

Ingredients
  

  • 1 cup butter softened
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 1/2 cups rolled oats
  • 2 cups fave mix-ins (1c semi-sweet chocolate chips, 1/2 cup M&Ms and 1/2 cup mini or quartered regular marshmallows)

Instructions
 

  • Preheat oven to 375 degrees
  • Cream the butter, sugar, and brown sugar for a minimum of 10 minutes. Should be fluffy and smooth
  • Beat in eggs and vanilla extract
  • In a separate bowl combine flour, cinnamon, baking soda, and salt. Add to wet mixture, but don't over mix
  • Stir in rolled oats
  • Add in your fave mix-ins.
    If using marshmallow or anything with caramel, I suggest adding those toppings to the top of the cookies once you drop cookie dough onto baking sheet lined with silpat baking liner or parchment paper. This keeps sugary mix-ins from sticking to pan and burning.
  • Drop rounded teaspoons onto baking sheet and bake for 10-12 min
