A-Train’s Famous Oatmeal Cookies
There is nothing that makes me feel more warm and cozy than the smell of cookies baking in the oven. A-Train started his baking career early with his Nana and me. When he hears the clinking of the metal KitchenAid mixing bowl, he comes running to help. He enjoys tasting the dough each step of the way to understand how the dough builds in each step. Really I think he just likes to sample the cookie dough. I thought he would be a fan of regular chocolate chip cookies, but it seems he built a true love for oatmeal cookies.
Over the years, we have tried several different oatmeal cookie recipes and finally landed on this customizable recipe. A-Train likes to have the flexibility to be creative with his mix-ins, so he can add his own flair, depending on his mood. One this is for sure, there will always be a good portion of Nestle semi-sweet chocolate chips and plenty of cinnamon in his oatmeal cookies. Since it was Halloween, our custom mix-ins were M&Ms and marshmallows for this batch.
One thing to note, if adding in anything like marshmallows or candy bars with caramel, it’s best to press those pieces on top of the cookie dough as you drop it onto the baking sheet. If any of these items find their way to the bottom of the cookie dough when baking, you can end up with burnt sugar bottom cookies.
A-Train’s Famous Oatmeal Cookies
Ingredients
- 1 cup butter softened
- 1 cup granulated sugar
- 1 cup light brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 1/2 tsp cinnamon
- 1 tsp baking soda
- 1 tsp salt
- 2 1/2 cups rolled oats
- 2 cups fave mix-ins (1c semi-sweet chocolate chips, 1/2 cup M&Ms and 1/2 cup mini or quartered regular marshmallows)
Instructions
- Preheat oven to 375 degrees
- Cream the butter, sugar, and brown sugar for a minimum of 10 minutes. Should be fluffy and smooth
- Beat in eggs and vanilla extract
- In a separate bowl combine flour, cinnamon, baking soda, and salt. Add to wet mixture, but don't over mix
- Stir in rolled oats
- Add in your fave mix-ins. If using marshmallow or anything with caramel, I suggest adding those toppings to the top of the cookies once you drop cookie dough onto baking sheet lined with silpat baking liner or parchment paper. This keeps sugary mix-ins from sticking to pan and burning.
- Drop rounded teaspoons onto baking sheet and bake for 10-12 min
